My famous homemade banana chocolate chip muffin recipe! Yum!

It is no secret that I love baking. It is one of my favorite things to do. I love being in the kitchen making yummy things. Now it is something that I am starting to share with our oldest. He loves helping mommy bake - and these muffins are his favorite to bake. I have been making this muffin recipe for over ten years. I started making them in my single girl days. My homemade whole wheat chocolate chip muffins get devoured every single time. I remember sending one of the muffins to daycare with Stanley before he was home with me and the teacher couldn't get over how fast he devoured the muffins.

The reason for calling them my “famous” muffins is that is how they are labeled in a cookbook that my work put together several years ago. It was my first “big girl job” after college, so that was exciting. Please let me know if you make them and what you think.

Whole Wheat Banana Chocolate Chip Muffins

Wet Ingredients

  • 8 peeled bananas

  • 8 tsp butter (softened)

  • 2 eggs

  • 1 tsp Vanilla (optional)

Dry Ingredients

  • 3 cups whole wheat flour

  • 1 1/2 cups brown sugar

  • 2 tsp baking soda

  • 2 tsp baking powder

  • 1 tsp kosher salt

  • 3/4 cup chocolate chips (or desired amount)


Directions:

  • Preheat oven to 375 degrees.

  • Mix the dry ingredients together in a large bowl. I like to use my KitchenAid stand mixer but you can do it by hand as well.

  • In another bowl, mix the butter and eggs together, gently mash in the bananas. Don’t over do it. The bananas should still be very lumpy.

  • Gently incorporate the wet ingredients into the dry ingredients. Be sure to not over mix!

  • Grease muffin tray and spoon the batter into the muffin tray.

  • Bake for approximately 22 minutes or until golden brown.

  • Let stand for 2 minutes and then remove.

  • Place on cooling rack and enjoy!
